Kale 'Tuscan Cavolo Nero' is a tall, large-leafed variety that can grow between 60-90 cm high, with leaves spreading 2-4 inches wide on long greenish-white stems. Its dark blue-green leaves have a textured, bumpy surface and create a fan-like shape when trimmed, giving the plant a unique, ancient look. Known as one of the best-tasting kales, it’s a favorite among Italian chefs and a key ingredient in traditional dishes like Ribollita soup. Sweeter and more delicate than curly kale, it offers a rich, earthy flavor and goes by many names including Cavalo Nero and Dinosaur Kale.

How To Grow  :

Kale thrives in a variety of climates, as long as its leaves mature during cooler weather. It doesn’t do well in heat but tolerates frost and snow exceptionally well. Seeds can germinate in temperatures from 5°C to 35°C, so planting during warmer periods allows growth to continue into cooler seasons. Typically grown as an annual from spring or autumn sowing, kale can also last two years as a hardy biennial. Its flavor improves after exposure to frost, which also enhances leaf texture and strength. Mulching helps protect roots as cold weather approaches, especially in colder regions where blue-green varieties may be more resilient.

Harvest:

 Leaves mature in about 53-65 days but can be harvested earlier as tender baby greens.
